Sweet Garlic Aioli

Serves: 1 1/2 cups
Ingredients:
10 cloves peeled garlic
250 ml sunflower oil
salt to taste
1/2 cup diced potatoes
1 egg yolk
1 tbsp cider vinegar
1-2 tbsp water
1/2 tbsp dijon mustard
ground white pepper
Instructions:
Pre-heat your oven to 200*c
Place the garlic into a small frypan and drizzle over a touch of oil and pinch of salt.
Roast in the oven or 10 minutes or until golden brown. Allow to cool
While the garlic is cooling, place the potato into a small pot, cover with cold water and a pinch of salt. Cook until tender and drain well.
Transfer the garlic and warm potato into a food processor and add the egg yolk, vinegar, water and mustard. Blend for 30 seconds until pale, before slowly adding the remaining oil with the motor running. If the aioli becomes to thick just add a tbsp of warm water. Continue until all the oil is added.
Season with salt and pepper.
Can store in the fridge for up to 2 weeks.
