Grapefruit chili syrup

Prep time: 10 minutes

Cooking time: 30 minutes

1 litre red wine vinegar

1 cup caster sugar

4 tbsp liquid honey

3 chili finely sliced

½ cup freshly squeezed grapefruit juice

1 grapefruit rind finely sliced

Method:

Reduce red wine vinegar with sugar, chili and grapefruit rind until ½ reduced

Add fresh grapefruit juice and reduce by another ¼ before adding honey

Store in airtight container

Grapefruit Curd

Prep time: 5 minutes

Cooking time : 20 minutes

6 Grapefruit

4 Medium eggs, beaten

350 g Caster sugar

120 g Unsalted butter

Cut into small chunks

Method:

Grate the zest of the grapefruit and squeeze the juice of all 6.

Set aside half the zest with 2 tablespoons of grapefruit juice, and place the remainder in the S/S bowl.

Add beaten eggs, then stir in half the sugar. Bring a pan of water to the boil and place the bowl over the top.

Add the butter and cook for about 20 minutes, stirring frequently, until the mixture starts to thicken.

Remove from the heat and allow to cool.
