Kiwifruit is cheap as chips at the moment.

Why is this? The season has started, China doesn't want them any more? Green is out? Over loaded with the furry little things?

There are so many things we can do with kiwifruit!

You can make:

  • A cocktail (kiwi, lime, soda, mint, coconut sugar)
  • Jam
  • Chutney
  • Marinade ( really good with duck)
  • Chopped fresh ! great source of vitamin c especially for our kids
  • Salads
  • Smoothies ( kiwi, banana, orange juice and coconut water)
  • Cheesecake ( make a normal cheesecake and top with kiwi jelly!)
  • Upside down cake ( replace the figs and apples for kiwifruit)
  • Salsa ( summer is coming people!)
  • Dehydrate ( 5kg can be taken down to 500 gm and then stored for up to a year!)

But I find a sorbet is  a wonderful way of celebrating the plentiful fruit.

Make heaps! freeze it down for the summer that just around the corner! or just have it in the winter!

Kiwifruit and Brandy Sorbet

  • 350 ml water
  • 90 ml sugar
  • 500 gm ripe kiwifruit
  • 30 ml brandy
  • Juice of 1 lemon

METHOD

Add the sugar to the water and bring to the boil, simmer for 3 minutes. Allow to cool. Puree kiwifruit with brandy and lemon juice and pass through sieve to remove the small seeds

Mix the cold syrup and kiwi pulp and freeze whisking from time to time to remove the large ice crystals or put through ice cream machine.

Serve!
