This is the crumble topping that i have used for over 10 years! Never fails and is delicious.

The great thing about this recipe is that you can make it and pop it into an airtight container and it will keep for weeks!

At this time of the year theres a few choices with fruit. Rhubarb, Apples, Tamarillos, Pears. Once you make the crumble topping you cook the fruit simply by peeling it, cut into pieces and add brown sugar, and a vanilla pod. Cook on a low heat until the fruit is soft.

This is not the healthiest recipe but by sprinkling a little over the top the cooked fruit becomes the star!

 

200g Butter

250 g Flour

3/4 cup of Brown Sugar

1/2 cup of Sultanas

1/2 cup of Chopped Apricots

 

Preheat Oven to 180 degrees

Place butter, sugar and flour into a bowl and mix well.

Spoon into a large baking dish and toast for 20 mins

Stir mix after 10 mins then add Sultanas and Apricots and cook for a further 10 mins until golden brown.

Remove from oven and transfer to a tray to cool.

 

Once Crumble is assembled and heated serve with a natural yoghurt delicious!
